Happy Everything! As we wind down into the final stretch of the Holiday madness, I will share one final menu with you before we begin celebrating the long awaited Holidays! Christmas is almost here…yikes! Christmas Eve is 2 days away…if you haven’t planned your menu…even if you have…you must try this menu…everyone will love this Christmas Eve Feast…it truly is a feast for the eyes & palate. The best part…it can be made in minutes! That means, you’ll have more time to socialize and share quality time with those you love, what’s most important this time of year.
Start the evening with White Truffle Pizza with Truffle Honey. You can find truffle cheese in most specialty stores, & Trader Joe’s has the best price. If you cannot find truffle cheese, use mozzarella & sprinkle a little extra truffle salt on the mozzarella. For total decadence, shave a little fresh truffle over the pizza…OMG!
Next, Christmas Eve Seafood Pasta as the main course. This dish is a twist on the Feast of the Seven Fishes, an Italian tradition that my family enjoyed for years. I can still remember my Sicilian grandmother preparing all the dishes, which were a lot! Instead of seven individual dishes, I instead combine clams, mussels, shrimp, calamari, sea scallops, cod & lobster in a basic tomato marinara sauce & summer for just a few minutes & serve all this deliciousness over linguine. This dish is so simple, yet so good. Be sure to order your lobster from Dorr Lobster…they are shipping for 2 more days!
I am serving Holiday Salad with the Pasta, which is a veritable feast for the eyes, as well as the palate. Grapefruit, orange, Asian persimmon & pomegranates are arranged over a bed of arugula, watercress, radicchio & fennel…drizzle a little cranberry vinaigrette & your all set!
For dessert, serve Panettone Bread Pudding. Panettone makes the best bread pudding, and this is laced with rum & triple sec, then topped with a dollop of sweetened whipped cream.
