I am not sure if there is an easier or more popular appetizer than this one. Only two ingredients…dates & bacon…baked together for delicious yumminess. Make extra…I promise, these little jewels will be devoured in no time!
Pit the dates by inserting a paring knife almost to one end of the date...you will engage the pit. Pull the knife down the middle of the date, dragging the pit with the knife (a). You will eventually remove the pit...this takes about 3 seconds. Repeat with the remaining dates until all pits are removed (b).
Cut each slice of bacon into thirds. Wrap each third around a date. You may need to stretch the bacon a smidge, so the 2 ends overlap. Place the wrapped dates, "ends down" on an aluminum foil-lined rimmed baking sheet. Refrigerate the dates until ready to bake.
When ready to bake, preheat your oven to 400˚.
Bake the bacon wrapped dates for 10-12 minutes, until the bacon is crispy. Remove from the oven.
Let the bacon wrapped dates cool for about a minute, then place on serving tray & serve. You can also keep the bacon wrapped dates warm in a warming drawer until ready to serve.
Allow about 3-4 per female guest; about 4-6 per male guest.
I really like using Pepper Bacon from The Fresh Market. The pepper-coated bacon works really well.
