Blue cheese, bacon & beef are one of my favorite burger combinations ever. When I was pregnant with Émilie, I craved this burger almost every other day, so creating it at home has such great memories for me. What I like most about this burger is there is both blue cheese & bacon mixed into the burger itself as well as topped on the burger! I prefer to use crumbled blue cheese, available in almost all cheese sections, in the burger mix, then a creamier blue cheese, such as Saga or Cambozola, for melting…both impart wonderful flavor. Summertime tomatoes…Brandywine, especially…are beautiful & delicious served with the burgers. I love cooking shortcuts, & Williams-Sonoma’s burger starters are great for this…this year, they created a Caramelized Onion Burger Starter, which has great flavor…it would be great in a meatloaf as well! Serve the burgers with Grilled Potato Skewers, Simply Grilled Corn & Grilled Brown Sugar-Butter Onions for a fantastic grilled menu that will keep summer going just a little bit longer…
Rinse & dry the ground chuck. Add the Burger Starter, blue cheese & bacon. Mix everything together well. Form 6-8 burgers, depending on the size you desire.
Preheat your grill. While the grill is heating, slice the saga blue or cambozola about a ½-inch thick. When ready, grill your burgers on one side, then flip, making sure to turn only once. About a minute before the burgers are done, add the saga blue or cambozola & allow to melt onto the burgers slightly. Remove.
This is how I like to serve the burgers......heat your rolls on the grill or in your oven for just a couple of minutes. Spread a teaspoon or so of the mustard, then build your burger according to how you like it. I am a ketchup girl myself. Emilie likes extra bacon......so does Bert. Serve & enjoy!
