Happy Spring…not really. We are still having to withstand the winter doldrums in many parts of the country, even in the South, where typically daffodils are abundant by now. Oh well. Since “soup weather” may still be the remedy at the end of a long day…& the fact that Passover is less than a month away…I decided to republish & share with those of you who are relatively new to Entertaining is Easy…my recipe for Matzo Ball Soup! My recipe is pretty much what I had as a child…a comforting, warming, & delicious variation of chicken vegetable soup……just with matzo balls added. In the Newsome household, if there is even a sniffle, out comes the soup pot, and Jewish Penicillin is being made. Growing up, my Jewish grandmother, Bubbie, made Chicken Vegetable Matzo Ball Soup every Friday night…we were expected to eat a bowl of this delicious Jewish soul food as a first course…after a big slice of challah with the soup, I could barely think about dinner! After all, this is a meal in itself…the ultimate one-pot wonder!
