Chocolate Peppermint Truffles are the ultimate Holiday indulgance! This Holiday confection has only 4 ingredients, which makes this recipe a Holiday staple for years to come. I use dark chocolate chips, heavy cream & ANDES Peppermint Crunch, which adds a nice texture to the truffles. Rolling the truffles in finely chopped peppermint crunch & dark chocolate chips makes the truffles festive for the Holiday table. You will become addicted to these delicious treats! What I like best is that the truffles are small, so you satisfy your sweet tooth, while not eating too many calories. The best part, though, is you get all the luscious dark chocolate & peppermint, which, to me, is the ultimate flavor combination of the Holiday season. Cheers!
Place the chocolate chips in the top of a double boiler (a). Over boiling water, melt the chips, whisking till smooth (b).
Whisk in the heavy cream until smooth. Remove from the heat.
Transfer the ganache to a bowl. Reserve a cup of the ANDES Peppermint Crunch, & add the remainder of the bag to the ganache, gently folding in the peppermint crunch just until combined.
Refrigerate until the chocolate peppermint mixture is firm. Do not worry if some of the peppermint separates from the mixture. To make the chocolate peppermint truffles, spoon out some of the truffle mixture & simply roll in your hands until you form a ball. Repeat until you've used the entire chocolate peppermint mixture.
Finely chop the remaining crunch (a). Finely chop an equal amount of chocolate chip & add to the peppermint crunch & stir to combine. Roll each Chocolate Peppermint Truffle in the chopped peppermint chocolate (b). Refrigerate until ready to serve.
