This margarita is a definite keeper! You would never know that there’s tequila in it, which makes this a cocktail that should definitely be sipped, not slurped. You can leave out the tequila, and this frozen cocktail becomes an equally delicious “mockarita”. What I love about this margarita is that you can leave out the mango & just add a couple more peaches. Make sure you buy a bottle of Williams-Sonoma’s Regular or Skinny Mango Passionfruit Margarita Mix…that’s the key to this cocktail. The mix blends perfectly with the peaches & mangos. I keep an extra bottle on hand, just in case. You never know when friends may drop by…& it’s key to be prepared! Cheers!
Place the peaches in a bowl & pour boiling water over the peaches......let the peaches sit for a couple minutes. Pour off the water & peel the peaches......the skin will easily peel off the fruit. Remove the pits & place the fruit in a blender.
Peel the mango, remove the pit, and add the fruit to the blender. Juice the lime directly into the blender, add the margarita mix & blend till smooth. You will have about 4 cups. If making "mockaritas", pour some of the purée into a separate container to blend with ice later. Add the tequila......if you wish to make ahead, refrigerate the margaritas until ready to blend.
To make margaritas (or "mockaritas"), allow about a ½ cup per cocktail......add a generous scoop of ice per cocktail......blend......make peach slices for each cocktail......pour, garnish & serve!
