12 large skinless, boneless chicken breasts (about 8 ounces/breast) or 24 boneless, skinless chicken thighs...or a mix of each
1 13.5-ounce can coconut milk
¼ cup fish sauce
½ cup soy sauce
1-2 squeezes Sriracha hot chili sauce (1-2 tablespoons)
2 tablespoons five-spice powder
6-8 large cloves of garlic
1 2-inch piece fresh garlic or 2 tablespoons ginger paste
2 serrano peppers (optional)
¼ bunch cilantro, chopped (optional)
The day before your party, place the chicken breasts in a large (gallon+) plastic bag, or divide the breasts between 2 (gallon-size) plastic bags, if you do not have a large enough bag.
Mix together the remaining ingredients in a blender (this will completely avoid any chopping). Be sure to juice the limes directly into the blender.
Pour the marinade into the bag(s) over the chicken breasts/thighs...make sure the chicken is completely covered with the marinade. Refrigerate the bag(s) overnight.
About an hour before serving, remove the bag(s) from the fridge, and empty the chicken breasts & marinade onto a large shallow pan. Preheat your grill.
Grill the chicken until the juices run clear when the chicken is pressed, or a food thermometer reads 165º when inserted horizontally into the center of the chicken breast (be sure to check 2 or 3 breasts to ensure uniform "doneness")......this will take about 10-20 minutes, depending on the size of the breasts & heat of your grill......I would err on a longer time if using large chicken breasts. Transfer the grilled chicken to a clean tray.
Remove the grilled five-spice coconut chicken from the grill, allow to rest for 5-10 minutes, then slice & arrange on a platter...garnish with chopped cilantro, if desired...you are ready to serve!
To make half this recipe, simply divide all ingredients in half...you will feed 6-10 people easily, most likely with leftovers! This recipe is easily doubled or tripled as well.
This chicken dish is also kid-friendly...I leave out the serrano peppers or divide the marinade in half & process 1 serrano pepper in the remaining half so little ones can enjoy all this asian flavor without any additional heat.
