This the easiest Halloween dessert to make! If you are a fan of chocolate & pumpkin together, then you will love this…and, we took this Halloween dessert one step further by using Nestlé® Toll House® Salted Caramel Cookie Dough, their cookie of the year, which is dark chocolate cookie dough with dollops of salted caramel mixed into the dough…in one word, YUM. The combination of dark chocolate, pumpkin & salted caramel is indescribable, it’s so delicious! Coating the ice cream in Halloween sprinkle & adding black licorice “spider legs” make the ice cream sandwiches festive for Halloween! Enjoy!
Place the individual cookie dough squares on a silicone-lined baking sheet about 2-inches apart (a). Bake the cookies for 11 minutes, remove from the oven immediately and allow to cool completely. (b)
Once the cookies are completely cooled, remove the pumpkin ice cream from the freezer. Using a biscuit cutter about the size of the cookies, cut out round cylinders about 1-1½ inches in length. Slice both ends to make the ends parallel, sit the cylinder on one cookie, and add the other cookie on top of the cylinder. Squish the 2 cookies together to make sure you truly are creating a "sandwich".
Roll each ice cream sandwich in the sprinkles to totally coat the pumpkin ice cream (a). Place each sandwich in the freezer until all the sandwiches are covered in sprinkles. Freeze until all the sandwiches are firm.
While the sandwiches are freezing, cut the licorice into 2-inch segments. Cut 8 segments or "spider legs" per sandwich. Remove the frozen cookies from the fridge. Using a toothpick, create 4 holes per side. Insert the black licorice pieces into the holes. Freeze until ready or serve or go ahead and eat the Halloween Ice Cream Sandwich Spiders...so fun!
