A delicious slider that has all the flavors of comfort food in one bite. These sliders are easy-to-make & can be quickly assembled. I typically serve these on New Year’s Day for good luck. These are also great to serve for Game Day Parties as well!
Prepare the hot pepper-cranberry-mustard sauce. Reserve about a third of the sauce for the sliders. Allow the sauce to cool for about 15 minutes, then add the white wine to make your marinade.
Rinse the pork tenderloins & place in a gallon-size resealable bag. Add the marinade & refrigerate for 6-8 hours or overnight.
When ready to make the sliders, preheat your grill. While the grill is heating, remove the tenderloins from the marinade. When the grill is hot, place the tenderloins in the center of the grill, and pretend that each tenderloin has 4 sides......grill each "side" for 3-4 minutes then turn. The tenderloins are done when the internal temperature reaches 145º......check with a digital thermometer for confirmation by inserting along the length of the tenderloin. When done, allow the tenderloins to rest for about 10 minutes before slicing the pork into ½-inch slices.
While the pork tenderloins are grilling, slice the rolls horizontally, wrap in aluminum foil, and warm in your oven at 100-150º for 10 minutes. If you have a warming drawer, place it on its low setting, & follow the same instructions.
Next, prepare the slaw. Mix together the package of cole slaw & the dressing.
To assemble, open the rolls......place a tablespoon of slaw on each roll, followed by 2 pork tenderloin slices......add a dollop of the cranberry-mustard sauce......arrange the hot pepper-cranberry mustard pork sliders on a serving platter or dinner plates & serve......& watch the sliders disappear!
