Pimento Cheese is a Southern staple. There are many variations, but typically, a shredded cheese, such as Cheddar, is blended with diced pimentos & mayonnaise. In this recipe, fat-free sour cream is substituted for the mayonnaise, & white wine is added…both give a really nice flavor to the pimento cheese fondue. Serve the fondue hot as an appetizer, as part of a winter party menu, as well as for game day fare. I like serving celery sticks, French bread rounds & kettle chips with the fondue…tortilla chips also work well, as do broccoli, carrots & red pepper strips. Enjoy!
Fill the bottom pot of a double boiler halfway with water & bring to a boil. Place the top pot inside the bottom pot, and add the wine, cheese & sour cream. Whisk occasionally as the cheese begins to melt.
Drain the pimentos, cut if in strips, & add to the other ingredients. Whisk till well combined. Add a couple shakes of Tabasco to the hot pimento cheese fondue, if desired.
Pour the hot pimento cheese fondue into a fondue pot, heat the burner & serve with the celery sticks, bread rounds & kettle chips.
