This recipe puts Avocado Toast over the top! Adding lobster to avocado toast is amazing…adding a bacon weave, a generous slice of summer tomato & a fried egg makes this brunch dish irresistible! All you need is a little fruit, a glass of something bubbly & you’re all set! This would also be great served for BFD…Breakfast for Dinner…cheers!
Thickly slice the tomatoes, then slice the cherry tomatoes in half.
Thickly slice & toast the brioche bread. Butter generously.
Divide the mashed avocado & spread onto the toasted brioche...divide the lobster medallions & place onto the mashed avocado...place a bacon weave on each lobster avocado toast.
Place a tomato slice on each bacon weave.
Fry the eggs in a nonstick skillet sunny side up. Place each fried egg on the tomato slices. Add some freshly ground black pepper, arrange the sliced cherry tomatoes around each Lobster Avocado Toast & serve.
