Now that the countdown to Mother’s Day has begun, I thought I’d share a Mother’s Day Brunch Menu with you, because many of you may have zero desire to attend Mother’s Day Brunch with a gazillion other people at a restaurant or club…I no longer do…it’s too stressful and these venues are so crowded, it isn’t even enjoyable. Secondly, if you don’t have a reservation by now, you’re not getting one. The problem is, though, there is an expectation to do something, & I want you dads to have a great day with your moms. After all, is it worth being in the doghouse all day because you didn’t do something for her? It isn’t, trust me.
So, I am here to save the day! I have tested this menu on two groups of friends, & I have tweaked everything to make you dads look like Bobby Flay…my secret chef crush…this coming Sunday. Your kids can even help, which is great, because there’s nothing that warms a mother’s heart more than for her child(ren) to explode with enthusiasm over what they made for Mom! Even setting the table makes for a very happy mommy. You know I’m right. She will be thrilled that you let her sleep in, brought her favorite “waking-up” beverage in bed, & that the house smells wonderful! She may be so happy with you that she may even want to take a nap later in the day with you, if you know what I mean?
So, enough of the rambling…here goes! Start your Mother’s Day Brunch Menu with Citrus Berry Salad with Mint. This vibrant fruit salad has naval & blood oranges, blackberries & strawberries, & a splash of Cointreau, in addition to chopped mint. This salad can be made ahead of time & refrigerated overnight, & will be a beautiful wake-up to Mom in a pretty little compote with a silver spoon.
If you decide that you are going to have a leisurely brunch this Sunday…which means, getting the NY Times for your gal, so she can read the paper…who does that anymore…have a little appetizer for you all to share, in addition to the Citrus Berry Salad…& serve her a glass of Rosé or Pink Champagne…it’s all about HER on Sunday, & what better way to show your appreciation than with a pink adult beverage? After all, it is 5 o’clock somewhere. I adore an herb butter with fresh radishes & a baguette. Fresh radishes are in season, and smaller radishes tend to be a little sweeter…adding fresh butter blended with freshly cut herbs, in this case, garlic scapes, another farmer’s market find, is easy-to-make & simply elegant…
…adding a few cheeses to the plate makes it even better! Seriously, what woman doesn’t like a little cheese with her baguette & wine? You’ve already scored a home run, & you haven’t even served the main course & dessert yet!
Now…onto the main course. A few weeks ago, I was intrigued by a recipe I found on Epicurious…an asparagus & two cheese quiche with a hash brown crust. I’m not a big fan of asparagus in dishes…I like it by itself, personally…but the hash brown crust…now we’re talking.
The has brown crust is beyond easy to make…I used thawed hash browns from the freezer case instead of shredding potatoes…this substitution works beautifully. For the quiche, I sautéed a mix of baby greens with shallots & dried tomatoes, then blended the eggs & cream with goat cheese & Robusto, a nutty, distinct aged gouda. This gluten-free quiche rocks!
I also made Ham & Cheese Puff Pastry Pinwheels, a 4-ingredient pastry that can be made in minutes, and will be devoured as soon as they come out of the oven! Your kids can easily make this, and they will be so proud. If you’re not a ham person, turkey will work well, and you can always eliminate the ham altogether for a vegetarian brunch.
Dessert, to me, is a must on Mother’s Day. This year, I am going gluten-free with Hazelnut Meringues with Roasted Strawberry Rhubarb Compote. The compote can be made a few days in advance & is so simple to do…cut up the rhubarb, hull the strawberries, toss with cornstarch & sugar…& a smidge of vanilla bean & ginger liqueur…you can substitute Triple Sec if you don’t have the liqueur…make the meringues a day ahead as well…& you will be serving something absolutely lovely to Mom on her special day…she will adore you!
Émilie created this centerpiece for Mother’s Day. Let the kids help…their creativity never ceases to amaze me. She literally spent an hour pulling azalea blooms fro the shrubbery to create this centerpiece! I just adore it.
