I recently discovered this incredible sauce on Pinterest from Pinch of Yum. This vegan sauce truly is amazing and does have a gazillion uses, from a pizza sauce to a topping with Summer Lobster Cocktails. The secret ingredient is pistachios…Lindsay from Pinch of Yum recommends a ½ cup and the pistachios really make the sauce! I prefer the sauce with the juice and zest of 2 limes, rather than one. I also make the sauce in a Vitamix, which produces a velvety smooth texture, which I prefer to when it’s made in a food processor. If you want a little extra heat or spice, add a few jalapeño seeds…delicious! You can also substitute another nut, such as cashews or macadamia nuts, for the pistachios…the hint of buttery sweetness from the cashews and macadamia nuts is spectacular! This sauce has a wide variety of uses, from being a great dip for crudité, as a sauce for meats and fish, as a spread for all sorts of wraps & sandwiches…the possibilities are endless! My recent favorite is pairing this with Easy Slow Cooker Pork Carnitas…the best!
