Happy Sunday & Go Panthers! It has been a while since I’ve published a blog, but 2016 has been gotten off to quite the busy start! Between work, school, after-school schedules, & a few other commitments, there wasn’t much time for blogging, but with coffee in hand, a quiet Sunday morning & a good night’s rest, it’s time to think about what to make for next Sunday’s big game! With the Panthers going to the Super Bowl, I had to make some time today and share my Quick & Easy Super Bowl Menu with you. Yep, we are going to make this menu quick & easy, because…Entertaining has to be EASY! Period.
You may ask, what exactly does a Quick & Easy Super Bowl Menu look like? Well, for one thing, we had better include pork. North & South Carolinians love their pork. I’m a big fan of sliders, because they’re much easier to eat…& not so messy…& I can make a bunch in no time flat. For this menu, I am planning to serve Hot Pepper Jelly-Cranberry-Mustard Pork Sliders. Hot pepper jelly is a wonderful Southern staple that I keep on hand always…make the Hot Pepper Jelly-Cranberry-Mustard Sauce ahead of time & marinate pork tenderloin in this awesome sauce…reserve a little to make the dressing & slaw…but a bunch of Hawaiian Sweet 12-Pack Dinner Rolls…or order them online…& you will have a pork sammie that will be a winner, hands-down!
Next…guacamole. A Super Bowl must. The problem I have with guacamole is that it oxidizes and turns brown over time…yuck. Here’s a trick I learned from a dear friend, Meredith Scott…if you add enough citrus juice, the guac remains green, which is great because you can make this ahead of time…&, it only takes 15 minutes, start to finish! Her recipe, Lemony Garlic Guacamole, is only 3 ingredients and beyond delish! The best part…the guac will look great all night long!
Onto chicken wings, another Super Bowl must. Last month, I shared with you Sweet Asian Orange Chili Chicken Wings…these wings sound HOT, but I promise, they’re not…they’re just very tasty. The wings get a little kick from Sweet Asian Chili Sauce, found in nearly every Asian section of every grocery store. I mix the Sweet Asian Chili Sauce with orange marmalade to create a tart & sweet glaze that has just a smidge of heat. I like this recipe because it appeals to everyone, the wings are oven-baked & sticky-delicious! Be sure to serve plenty of napkins! The wings can be made in 10 minutes, baked, then served. For a large crowd, make the wings early in the day, then reheat at 200º for about 20 minutes before serving…the wings will be perfect.
Another Super-Bowl staple is always chili. I really like Bison Black Bean Chili…bison is lean & flavorful, making this chili protein-packed, gluten-free & skinny. Serve low-fat sour cream & salsa for those watching their calories, and all the other fixings…cheese, real sour cream & bacon…for those not. I suggest making the chili next Saturday…the flavors will meld overnight, making the chili even tastier.
Now for dips. You have to serve dips. What’s a Super Bowl Party without them? I know we have guacamole, but there’s just something about dipping chips or veggies into some cheesy wonderfulness. A Southern fave is RO*TEL. Have you had it? All it is are canned tomatoes & chiles, but when you add it to sausage & Velveeta…all I can say is OMG. I will write my disclaimer that Rotel Sausage Dip is probably a heart attack in a slow cooker, but it is just so darn good! One time, I caught a friend wiping the inside of the slow cooker clean with his finger. I know, gross, but seriously, I have never seen a drop of this dip ever left in the bowl.
The other dip I will be serving is Buffalo Chicken Blue Cheese Dip. I just love this dip! It’s better than Buffalo wings because everything is mixed in one bowl, so there’s no mess! I like serving this dip with Tostitos® Scoops and celery sticks. Yum is all I can say.
Now…for the cocktail! Since the Panthers are in the Super Bowl, we need a celebratory cocktail in honor of them! Carolina Cocktails are actually martinis with a splash of bubbly…citron vodka, blue curaçao, Alizé Blue Passion, white cranberry juice & fresh lime juice…the blue is very Carolina Panthers Blue & the taste…one may be enough! Be sure to have these on hand should the Panthers become the next Super Bowl Champs!
