Greetings, Friends! I hope you are having a good week & staying warm. I originally had planned to publish my second Caribbean-inspired menu blog in the next day or so, but after we had dinner last night, I knew that I had to share that menu with you first…
…because dinner was that (surprisingly) good…&, even better, it was that quick & easy!
The story behind A Quick & Easy Tex-Mex Comfort Food Menu is that I was on call yesterday…actually, I have been on call since Monday…& Bert was traveling to New York on business. One of my favorite babysitters from the summer, Ellie, was taking care of Émilie so I could work late in the Operating Room…which means, I needed to have dinner ready for them after Émilie’s after school activities. Given that I leave the house around 6:20 in the morning…I had to think fast Monday night. I first asked Emilie what she wanted for dinner…”Chili, Mommy.”
After some pondering in the pantry & freezer, I grabbed frozen chicken breasts (boneless & skinless, if course), a can of black beans & black olives, a large can of RO*TEL, & some chili-lime seasoning. I remembered that we had opened a jar of corn salsa a few days ago, so I grabbed that as well. I stuck everything in the fridge to remind myself that these were the ingredients, as I was putting dinner together at 5:00 in the morning…let’s just say that my mind isn’t exactly what it was…
…the next morning, dinner was put together in about 5 minutes. The final result looked a little watery, so I threw in a small can of tomato paste. The slow cooker was set for 10 hours. When I arrived home, I shredded the chicken, then set out Tostitos Scoops®, cheese, sour cream, kale (so good in the chili!) & chopped jalapeño (for me)…Émilie, being the cheese lover, added a bunch of shredded cheese to her dish…I added the other fixins, & I must tell you, the Slow Cooker RO*TEL Chicken Chili was divine! The chicken was succulent & flavorful from simmering in the RO*TEL & corn salsa all day. The chili-lime seasoning added just the right amount of heat. This is a great dinner for any family, any night, because it is so quick & easy to make! It would also be a great gameday chili to serve! I would serve Slow Cooker RO*TEL Chicken Chili anytime to anybody…it is that good…& so quick & easy!
It just so happens that I thought ahead Monday night & made a quick appetizer for the girls…I cannot believe that I was actually thinking that night! If I was planning to make chili, then I needed to make an appetizer to pair with the chili. Back to the drawing board.
I had 2 ripe avocados. Great. I also had a ripe plantain…if you know me, you know I had to experiment & combine the plantain with the avocados. After a little this, a little that, I finally came upon the right balance of flavors! I may even make Sweet Plantain Guacamole for one of my Caribbean menus & serve the guac with plantain chips!

Time to go…it’s time to think about what to serve for dinner tonight…Ellie & her mom enjoyed the chili for lunch today, & they loved it! Yippee! Have a great evening & stay warm!
