There is nothing I like better than a potato side dish when having Brunch…I remember always having some sort of potato side dish while growing up in the Northeast. When I initially created my Lobster Eggs Benedict dish, I knew that a potato side dish would be just the ticket, but it had to be simply prepared, so as not to compete with the Lobster Eggs Benedict served with Truffle Hollandaise. Slicing tiny potatoes or fingerling potatoes, then tossing in olive oil, thyme, salt & peppers is quick & easy,,,roasting the potatoes takes no more than 20 minutes to create a nice crust with a creamy center. When I first made this dish, Émilie declared, “Mommy, the potatoes look like money”…thus the name, Roasted Potato Coins…enjoy!
