When I am serving a heavier main course, such as Summer Corn-Tomato-Pesto Mac N’ Cheese, I like to serve a lighter, or “skinny”, appetizer so my guests…or family…aren’t uncomfortable after the main course, & still have a little “room” left for dessert. Such is the case with Skinny Smoked Salmon & Trout Cucumber Bites…both smoked salmon & trout are low in calories, yet are great sources of protein, which helps curb hungry appetites…& starving children…while the Mac N’ Cheese bakes in the oven. Using low fat or fat-free cream cheese also contains calories, as does substituting cucumber slices for crackers. I think cucumber & smoked fish compliment each other so well. This appetizer is easy to prepare, & can be made a few hours ahead of time & stored in the fridge. The cucumber bites are perfect for younger appetites, & I prepared this skinny appetizer as part of my Back-to-School Menu..it’s also a great grown-up menu…serve a little bubbly with the menu & enjoy!
1 8-ounce container light or fat-free cream cheese, softened
1 package smoked salmon
1 package smoked trout
Using a peeler, remove lengthwise a strip of peel...rotate the cucumber, leaving about a ½-inch intact, then remove another strip of peel (a)...continue doing this...then slice the cucumbers horizontally into ¼-inch slices (b). You will have very attractive cucumber slices for your presentation.
Spread a smidge of cream cheese on each cucumber slice. Open each package of smoked fish, cut a small square, & place it on the cream cheese.
Arrange the skinny cucumber bites on a serving platter & enjoy!
