A skinny dip is a great addition to any party table! I really like serving this tzatziki dip because it derives a bunch of flavor from the lemon, cucumbers, herbs & pine nuts, while nonfat Greek yogurt provides wonderful creaminess without the calories. Make this dip a day before serving to allow the flavors to meld. Serve with pita chips & crudité. The tzatziki dip is also delicious served on grilled or broiled fish, chicken or lamb, as well as in a variety of sandwiches & wraps.
Skinny Tzatziki Dip with Lemon & Toasted Pine Nuts

1 large cucumber
¼ cup pine nuts
juice & zest of 1 lemon
1 bunch dill
1 bunch mint
1 bunch Italian parsley
1 teaspoon garlic paste
16 ounces nonfat Greek yogurt
½-1 teaspoon kosher salt
a few grinds freshly ground black pepper
1 16-ounce bag pita chips with sea salt
Peel the cucumber. Thinly slice the cucumber (¼-inch slices), then cut the slices, 4 or so stacked at a time, into small dice. Toss the diced cucumber into a medium-size bowl.
Meanwhile, preheat your oven to 300º. Place the tablespoon of pine nuts on a small baking sheet & toast until they become a caramel brown color, about 10 minutes. Remove from the oven & allow to cool for a few minutes.
Add the lemon juice & zest to the cucumber. Toss well.
Cut about the top quarter from the dill, mint & parsley. Place in a food processor, and add the garlic paste & toasted pine nuts (a). Process until the herbs are finely chopped & the ingredients are well combined.
Add the food processor ingredients to the cucumber-lemon mixture. Toss well to combine. Add ½ teaspoon kosher salt & black pepper.
Add the Greek yogurt, mixing well to combine. Taste & additional kosher salt & pepper. Refrigerate until ready to serve.
Serve with pita chips...enjoy!
...I really like garlic paste for this recipe as the flavor is more evenly distributed, which creates better flavor... ...if you have not done so already, please purchase a Black & Decker mini-chopper from Amazon...I just bought a new one for $14...I wore the last one out...
