Caribbean flavors somehow taste really great during the winter months…tropical flavors are inspiring, warming us during cold, dreary days. Slow-roasting a pork shoulder with Island flavors creates a delicious cut of meat that is tender & moist & rich with Caribbean spices. Serve with Quickie Pineapple Lime Salsa & King’s Hawaiian Sweet Rolls for a delicious New Year’s Day dish, or as comfort food for a dinner party, Football Sundays, or any time you need a little warm-weather “pick-me-up”! Serve the pork with Caribbean Coconut Rice & Peas and Quick Collard Bacon Sauté as part of a wintertime dinner party menu.
1 bottle your favorite tropical or Caribbean marinade (optional)
1 recipe Quick Pineapple Lime Salsa
King's Hawaiian Sweet Rolls
Preheat your oven to 250˚.
Unwrap the Boston Butt, being sure to remove any coverings or twine from the pork. Butterfly the pork roast as best you can...do not worry how the pork looks...you want lots of cut layers to place your rub. Rinse the pork well & place on paper towels to absorb any drainage.
Combine the brown sugar with all the spices in a bowl. Mix well together.
Spoon the spice rub all over the layers of pork shoulder until well-coated with the spice rub. Set aside a ½ cup of spice rub.
Using butcher's twine, fold & wrap the pork shoulder until you have the meat contained in a reasonably neat package. Make sure the fatty side of the pork is upright.
Peel & thinly slice the onion. Place the sliced onions in a roasting pan & sprinkle some of the spice rub over the onions. Place the wrapped pork shoulder on the onions. Score the fat well with a sharp knife (a). Coat the entire surface of the pork shoulder with the remaining spice rub. Place the roasting pan in the oven (b).
After 1½ hours, pour ⅓ of the rum over the pork shoulder. Repeat this after 3 & 4½ hours of slow-roasting.
After 6 hours, remove the Slow-Roasted Pork Shoulder from the oven & allow to cool for 10-15 minutes.
Once the pork shoulder has cooled, remove the twine & shred the pork. If desired, douse the Slow-Roasted Pork Shoulder with a splash of your favorite tropical or Caribbean marinade.
Serve the Slow-Roasted Pork Shoulder alone, with Quick Pineapple Lime Salsa or as sliders with the Hawaiian rolls & Salsa.
